Las tendencias en el consumo mundial de carnes apuntan,
en términos generales, a potenciar carnes menos grasas y

de cabrito, conejo y pichón; mientras que sigue aumentando
la carne de pavo y mantienen su protagonismo a nivel
mundial el pollo y el cerdo. En este artículo se analizan las

y se apuntan las tendencias de moda en el consumo por
