El sector de las conservas vegetales engloba a todas aquellas industrias cuya actividad es transformar materias primas de
origen vegetal: hortalizas, legumbres y frutas. Se denomina conserva vegetal al proceso de envasado y manipulación de productos que
se ha hecho de tal forma para que perdure, e incluso en algunos casos mejore, las propiedades nutritivas de la calidad del mismo como
su textura y el sabor. Este producto alimenticio que, envasado herméticamente y sometido a un tratamiento térmico, no se altera ni
representa peligro alguno para la salud del consumidor bajo condiciones habituales de almacenamiento durante un tiempo prolongado.
