En principio, todos los productos vegetales y animales que contienen hidratos de carbono pueden llegar a producir alcohol etílico, en mayor o menor medida. Para ello se necesita la actuación de diversas especies de levaduras que se encuentran en el aire (o que también pueden llegar a cultivarse) y que son las que llevan a cabo un proceso de fermentación sobre los hidratos de carbono más simples, denominados monosacáridos.
