En Grecia se consideraba un regalo de la diosa Palas Atenea a los atenienses. Desde esta zona se extiende a Egipto y también a toda la cuenca del Mediterráneo. A Italia llega el olivo hacia el siglo VII antes de Cristo. En España, las primeras plantaciones de olivos pudieron tener un doble origen: por una parte griegos y fenicios tenían colonias en la Bética; por otra, el Imperio Romano llevaba consigo todos aquellos cultivos que pudieran servir para abastecer a sus legiones y a la Metrópoli.
