Las frutas constituyen un grupo muy heterogéneo de alimentos. Una fruta es el resultado de la maduración del ovario y de otras partes de la planta asociadas al mismo. Generalmente esta maduración da por resultado que el órgano femenino de las plantas se cargue de azúcares, ácidos, vitaminas, aceites esenciales y de un conjunto de productos orgánicos procedentes de la transformación de la savia que circula por la planta.
